Maple Vanilla Mead

My next experimental mead recipe is going to be a maple vanilla mead. Here's the base recipe: 

- 2lb raw acacia blossom honey (primary)
- 12oz Vermont maple syrup (primary)
- 1 vanilla bean (secondary) 
- 2 whole allspice berries (secondary) 
- 6g of oak chips (secondary)
- 4-6oz Vermont maple syrup for back sweetening and taste

Yeast: Lalvin 71B

This will hit about 12% ABV. This will be my first time working with acacia honey, raw honey, maple syrup, and oak chips, so this is going to be fun and interesting. 🍷
